Dried Abalone by Alicia's Market Print E-mail
Sunday, 13 September 2009 00:00
About 5 or 6 years ago, my Father-in-law asked me if I could try find him dried abalone. I said, "dried abalone...what's dat?" He told me in his hanabattah days, plenty boys used to carry around a hunk of dried abalone in their pocket. Throughout the day they used their pocket knife to shave off thin slices to munch on. When he was telling me about the dried abalone days, he had the nostalgic tone in his voice and twinkle in his eyes, so I knew it meant a lot to him to taste it again. So I went all over Chinatown, the fish markets, poke shops and called some local seafood distributors, but everyone had the same answer, "nobody make dried abalone anymore." He was pretty disappointed when I told him no can find, but I told him I would keep an eye out for it. All the years passed and then couple months ago, my bro told me that Alicia's Market (#1 limu poke in the WOW Grinds blind taste test) had dried abalone. I went the next day and picked up some pieces. The guy at Alicia's said they started drying their own abalone again recently. I not sure if this is the same thing my Father-in-law had back in the day, but was tasty. Had a sweet salty glaze on the outside...more on the sweet side. The meat was slightly chewy, but still tender enough so your teeth sink in easily. And then had that oh so ono oceany flavor that abalone usually get. I still gotta take some to my Father-in-law...hopefully soon. Would be nice if it brings him back to his hanabattah abalone days. Btw, Alicia's Market making abalone poke too.

Howzit,

What you got at Alicia's is called Locos from Chile. It's similar to abalone but naturally sweeter and a little softer when dried. Some brudas and I have been drying them and the real abs for years now, just for our personal stash and close friends. We want to keep the buy cost down so we want the demand to be low even though it's still pretty pricey.
You can find the real dried abs in chinatown but the quality is bad and cost about $ 180 a pound, not worth it.
On my last trip to Vancouver and Seattle, which was awhile back of at least 10 years, the dried abs in Vancouver was going for $800 @ lb and in Seattle it was $500 @ lb.
For now, Alicia's is the only game in town. Aloha

Thanks for the interesting info John. I was wondering what Alicia's meant by "Chilean Abalone." Talk about pricey, I didn't know that real abalone cost that much. How come nobody is farm raising abalone...aquaculture?

I saw these in NYC's Chinatown a month ago. (Address: Chung Chou City 39 Mott Street, New York, NY.)

Different grades of abalone were sold, the highest (smaller, darker ones) was USD$1,900./pound. Yes, you read that right! Maybe it's an extra special variety???

I see much "cheaper" here:
http://www.esteroba yabalone.com/products.htm

The highest grade of US-produced ginseng (from Wisconsin?) was $998./pound (or tael? 1 tael =37.5g)

Those are RETAIL prices.

In 1895, California-dried abalone was shipped to China and sold wholesale 5 CENTS a pound. (Of course, the US was on a Gold-standard then: 1895 USD$0.05 > USD$3.39 in 2011's POG.)

Messrs. Samuel Wells & Co., of Cincinnati, Ohio cited the avg 1895 wholesale price was $3.75/pound (POG Gold-adjusted, 2011 = USD$ 254.)

Some economics grad student should do a study on abalone prices - there must be Chinese price records going back hundreds of years.
