Kikkoman Soy Sauce - This is one of the big 3 shoyus loved by local folks and seems to have international popularity. Legend has it that the first Japanese immigrants who came to Hawaii brought with them kegs of Kikkoman shoyu from their home land. Kikkoman could be the OG (original gangsta) of local shoyu. Kikkoman shoyu originated in 1661 when the Takanashi family began brewing shoyu in the town of Noda. For choke history of Kikkoman shoyu check out soyinfocenter.com. Naturally brewed in Walworth, Wisconsin. Ingredients - Water, Wheat, Soybeans, Salt, Sodium Benzoate less than 1/10 of 1% as a preservative. Bragg's Liquid Aminos (wild card entry) - Judge Hot For Helena's wife entered this one as a wild card to see how this healthy alternative to shoyu would hold up against the real thing. The folks at Umeke Market use this product in their stir fry and it tastes pretty darn good. Ingredients - Vegetable Protein from Soybeans and Purified Water. Aloha Shoyu - Another colossus of local shoyus. This is the only competitor that is brewed in Hawaii. Originally brewing in Kalihi in 1946, and now in Pearl City. Some say that Aloha Shoyu is distinctly different from Japanese shoyu due to it's "original blend." Maybe this is the one true Hawaiian shoyu. Does not say naturally brewed and claims no MSG. Ingredients - Water, Wheat Gluten, Soybeans, Salt, Sugar, Carmel Coloring, Sodium Benzoate a preservative. Yamasa Soy Sauce - This is the other shoyu popular among local folks and in local eateries. The legend of Yamasa shoyu dates back to 1645 in Yuasa, Wakayama Prefecture. Yamasa shoyu is so revered in Japan that in 1864 it was honored by the Tokugawa Shogun and named "Best Soy Sauce." It's naturally brewed in Choshi, Chiba Japan. This is the only shoyu competitor that is brewed in Japan. Ingredients - Water, Soybeans, Wheat, Salt, Alcohol to preserve freshness.
